Ingredients
3-4 corn tortillas
OR
2-3 med flour tortillas
3-4 eggs
2 tbl spoons of cooking oil
salt to taste
Directions
Shread tortillas into little bitty pieces ("migitas" = tiny bits). Get oil medium hot, add migitas and cook until brown, stir often to keep from burning. When migitas are browned and toasty, quickly add eggs, salt, and then scramble them into the migitas. Cook until eggs are
lightly done.
Serves 2-3 people (or one Xavi).
