XAVI's MIGITAS (from Leo)

Ingredients

3-4 corn tortillas
OR
2-3 med flour tortillas
3-4 eggs
2 tbl spoons of cooking oil
salt to taste


Directions

Shread tortillas into little bitty pieces ("migitas" = tiny bits). Get oil medium hot, add migitas and cook until brown, stir often to keep from burning. When migitas are browned and toasty, quickly add eggs, salt, and then scramble them into the migitas. Cook until eggs are lightly done.

Serves 2-3 people (or one Xavi).



They are best eaten with fingers. Xavi and I love them with catsup. For Pat I add a bit of Texas Gunpowder or powdered red chili. My grandfather made them for my father, my father made them for me,I make them for our kids, and now John-John makes them for Xavi. I think it used to be a Basque shepperd's dish.
