Ingredients
2 ½ Tbs vegetable oil
1 medium yellow onion, chopped
2 ½ cloves garlic, minced
1¼ Tbs chili powder (Use California or Santa Cruz, not New Mexico)
¾ Tsp cumin
¾ tsp dried whole oregano
7 ½ cups chicken broth
½ tsp salt (then add more later)
1 tsp pepper
3 chicken breast halves, cooked and cubed (or more or less chicken)
1 - 2 cans yellow hominy
GARNISH
Directions
Cook chicken (grill or boil); let cool, then cube.
In a large soup pot, sauté onion in oil over medium heat until tender. Add garlic, chili powder, cumin and oregano, sauté about 1 minute. (Use dried whole oregano and rub in hands before adding.)
Add broth, salt and pepper, and bring to a boil. Add chicken and hominy, and let simmer about 30 minutes. Ladle into bowls, garnish to taste.
