Ingredients
Five pounds prepared masa (can be purchased at Food City or Rancho Market)
1½ pounds of shortening (I use Crisco but lard is traditionally preferred)
1 cup chicken broth
1 tablespoon salt
5 teaspoons baking powder
Directions
In a large bowl, beat shortening to the consistency of whipped cream, mix in masa, broth, baking powder and salt, and continue beating until mixture is so fluffy a spoonful of it, dropped into a cup of ice cold water rises to the top. In deep pie pan or casserole dish, spread the masa mixture evenly to about one third of the depth, Add filling (recipe below), then cover with more masa. Bake 350 degrees for one hour. Makes about three large pies.
