The family hired Trini to help Mom care for Grandma, but she soon became part of the family. She sometimes made sopa de maíz for us. This soup is wonderful, but the best thing about making it is remembering the sweetness of Trini's ways.
Ingredients
6 ears white corn (scrape kernals off corn cob)
¼ cup butter or margarine
2 cloves garlic, smashed to releae flavor, but intact
1 small onion, finely chopped
1 medium tomato, diced
1 stalk celery, finely chopped
3 carrots, diced
½ can tomato sauce
1 small can chopped green chile
2 T chicken boullion crystals
¼ cup milk
1½ cups jack cheese, cubed
Directions
In a dutch oven, melt butter and saute onion, tomato, celery and garlic cloves. Remove garlic cloves and discard. Add 5 cups boiling water. Add carrots, corn, green chile, boullion crystals, and tomato sauce. Bring to a boil. Add milk and cheese. Simmer until cheese melts.
