Ingredients
4 small, 6-inch flour tortillas
1 pound fresh shrimp, cleaned and deveined
8 ounces mozzarella cheese, shredded
½ cup chopped fresh basil
½ cup diced tomato
½ cup olive oil
Salt and pepper
Directions
Preheat oven to 300 degrees F.
Saute' the tortillas in 1 tablespoon of the olive oil until both sides are browned. Remove the tortillas. Add about 3 tablespoons olive oil and saute' the shrimp for approximately 1 minute, stirring constantly. Drain the shrimp and slice each one in half lengthwise.
Mix the cheese, basil, tomato, and shrimp. Top each tortilla with one-fourth of the mixture. Add salt and pepper, and heat them in the oven for approximately 5 minutes, or until the cheese is melted. Slice and serve hot.
