RED CHILE CON CARNE



Ingredients

5 pounds of lean porkTwo to three cups of chicken broth
Six cloves of garlic, minced
1 tablespoon of salt


Directions

Cut pork into cubes about ¾ to an inch in size. (Trim most of the fat off the meat, leaving just enough to prevent it from being too dry.) Brown the meat on all sides, to enhance the flavor. After browning the meat in a frying pan, transfer it to a large pot, add the chile roué and sauce and cook until tender.
