MEXICAN WEDDING COOKIES

Other countries feature similar wedding cookies, but none I've ever tasted melt in your mouth quite the way Mom's did. She always made these for Christmas because they resemble snowballs.

Ingredients

2 cups flour
1 tsp salt
1 cup butter or margarine
¼ cup sugar (optional)
1 cup chopped pecans
powdered sugar


Directions

Sift together flour, salt, and sugar. Cream butter. Add dry ingredients. Stir in pecans. Drop by rounded teaspoonful on ungreased cookie sheets. Bake at 350 degrees for 9-12 minutes. While still warm, roll cookies in powdered sugar.

Yield: 6 dozen
