GREEN CHILE



Ingredients

4.5 lbs boneless pork roast, cut in fist size pieces
8 cups water
2 T salt

1/3 cup lard or shortening
1/2 cup onion, finely chopped
3/4 cup flour
4 cups broth
4 cups chopped green chile
1 cup diced tomatoes
salt to taste

Directions

Boil meat in salted water until meat begins to fall apart. Reserve broth. Cool meat and shred into bite size pieces. Set aside.

Heat lard and add onion. Cook for about half a minute, stirring. Add flour and mix well. Gradually add both, stirring chile and tomatoes. Bring to a boil and add meat. Add more salt if needed. When chile begins tgo boil again, turn heat down and simmer for about 5 minutes, stirring constantly.
