FLAN



Ingredients

1¾ cups sugar
8 eggs
2 cans evaporated milk
2 tsp vanilla
6 T warm brandy


Directions

Place 1 cup sugar in a deep pan and heat. Stir constantly until sugar melts and turns golden. Tip pan around until entirely coated with caramel. Allow to cool.

Custard: Beat eggs well. Add milk, remaining sugar and vanilla. Mix well. Strain into carmelt coated pan. Cover and place pan into a larget pan containing hot water. Bake at 350 degrees for one hour or until knife inserted in center comes out clean. Refrigerate. When ready to serve, turn out on platter. Pour brandy over flan, ignite and serve.
