Maryland Blue Crab Cakes

Mom and dad have been telling me to send out my recipe for Maryland Blue Crab Cakes so here it is.

Ingredients

16 ounces crabmeat (preferably blue crab backfin)
1 egg
2 teaspoons Worcestershire sauce
1/4 teaspoon dry mustard
2 tablespoons mayonnaise
1 teaspoon lemon juice
2 teaspoons mustard
3/4 shot glass melted butter*
1 teaspoon parsley flakes
2 teaspoon Old Bay Seasoning**
1 teaspoon cayanne pepper***
1/2 cup breadcrumbs


Directions

Mix well, everything but the crab meat.

Gently add crab meat but don't mix too finely. You want there to be some good lumps of crab meat. Form the mix into cakes and place them on a lightly oiled cookie sheet. This amount should make about 10 crab cakes or so. You can also make more, smaller cakes and use them as appetizers. Bake for about 20 minutes at about 350 degrees or until the edges are browned.

This is one of those dishes that you can get creative with. I never use a recipe to make them and I like to change it up a little every now and again. I've added parmasan cheese, a bit of white wine, garlic, finely chopped or dried minced onion, whatever. Cook by inspiration and let me know what you think!

*Yes, shot glass. Not sure what that equates to in tea or tablespoons but it doesn't have to be exact and a shot glass just seems to work well. Just pop in in the microwave for 30 secconds or so.

**Do they have that on the shelves in AZ? I don't remember ever seeing it there. You can get it everywhere here from the gas station to Subway (the sandwich place, not the Metro). People put it on just about everything in Maryland!

***For some reason, people just don't make spicy crab cakes here. They go over really well but I might be the only one that makes them spicy. Feel free to use more pepper if you want more kick!
