Mole is a favorite with our family. The sauce is sometimes called chocolate gravy, but don't let that description put you off! The flavor is subtle and delicious.
Ingredients
2 chickens, cut up
8 cups water
4 slices French bread, crumbled
2 cups chicken broth (reserved from boiling chicken)
3 T oil
¼ cup creamy peanut butter
¼ round of mexican chocolate, crumbled
6 T flour
6 T red chile powder
4 cups chicken broth (reserved)
1 t salt or to taste
Directions
Boil chicken until tender. Reserve broth. Skin and bone cooked chicken and set aside. Soak French bread in 2 cups broth. Blend and set aside. Heat oil in a dutch oven. Add peanut butter. Stir until well-blended. Stirring constantly, add each of the following ingredients one at a time, blending each before adding the next: Flour, red chile, bread and broth mixture. Add remaining broth and salt. Simmer to thicken. Add chicken. Simmer for 2 or 3 more minutes. Serve with Spanish rice or fideo, beans, and hot tortillas.
