AZTECA SOUP



Ingredients

2 ½ Tbs extra virgin olive oil
1 medium yellow onion, chopped
4 cloves garlic, minced
1 Tbs Ancho chili powder, 1 Tsp Hatch chili powder
1/2 Tsp cumin
1/2 tsp dried oregano
8 cups chicken broth
½ tsp salt (or to taste)
1 tsp pepper
3 chicken breast halves, cooked and cubed (or more or less chicken)

GARNISH



Directions

Cook chicken (grill or boil); let cool, then cube.

In a large soup pot, sauté onion in oil over medium heat until tender. Add garlic, chili powder, cumin and oregano, sauté about 1 minute. (Use dried whole oregano and rub in hands before adding.)

Add broth, salt and pepper, and bring to a boil. Add chicken and let simmer about 30 minutes. Ladle into bowls, garnish to taste.
